The wine 100% Chenin Blanc grapes grown on clayish silicate soil, and is hand harvested. Once picked, this wine ferments two months in barrels. It then matures in stainless steel tanks on its fine lees until the follwing spring. The wine develops a good balance between acidity and a light residual sugar which gives a natural fresh flavour.
The soil gives a mineral taste of flint stone which will increase with the time.
It’s characterized by it the yellow, shining colour with aromas and flavours of apple, quince and citrus fruits. It can be served with sea foods and as an aperitif.
