Wine Therapy

Veneto is home to Amarone, Valpolicella, Soave and of course the sparkling wine of Prosecco. For both light bodied Valpolicella and velvety Amarone the Corvina, Rondinella and Molinara grapes are used to great effect. To make fine Amarone the grapes are air dried on straw mats for 3-4 months, a process called appassimento. When the raisined grapes are pressed they produce a rich and wonderfully complex wine. For a truly special Prosecco look towards to the towns of Valdobbiadene where delicate and aromatic sparklings are enjoyed under the sun.
